Since the 40 minutes it usually takes to bottle wine occasionally involves storytelling and solving the world's problems, Ron's latest project invites customers to submit stories they themselves have toyed with ... to first be critiqued by other customers who are avid readers, and then after revisions, be published in an ongoing wine lover / story lover journal under the molinara name - a winemaking / storytelling collaboration. Customers wishing to participate but lacking the knowhow or the inspiration are directed to mhdiaries.ca as a start.

good / better / best - rather than 'flavour' and 'mouth-feel', suppliers of wine-kits differentiate the quality of their product lines through contrived designations such as: 4, 5, 6 & 8 week wines. At molinara.ca, some of the very best products finish fermenting in under 3 weeks.
Another way quality is implied is through the starting concentration levels of either 6L, 12L, 14L or 18L, which all ultimately make 23L. The rules under which Ferment on Premise facilities operate necessitate the use of pasteurized juices/concentrates which offer a shelf life prior to inoculation with yeast. Flash pasteurization/concentration procedures have advanced to the state that 6L concentrates can produce tastes better that 23L juices. Concentration is invaluable when it comes to reducing shipping costs and shelf space, but when it comes to implying quality, this winemaker believes it is misleading.
Just for fun, at the next visit to a winery, ask the question if their wines are 4, 5, 6, or 8 week and either 6L, 12L, 14L or 23L and watch the reaction.
At molinara.ca, all fermentation periods are 5-6+ weeks and quality designations are based on 'flavour' and 'mouth-feel'. Hence ... good / better / best.
hippocras - honey, grapes, and spices
melomel - mead made with fruit or fruit juice
metheglin - mead made with spices and extracts
rhyzamel - mead made with root vegetables
styles - many commercially available international wines have been trademarked by the country of origin. In this industry, either the word 'style' appends the name or a variation of spelling is used such as 'valpola' in place of 'valpolicella style'.
